Banana and Oat Muffins

These delicious muffins cleverly use nutritious oats as the flour base making them a fibre laden post workout treat. They are also great for lunchboxes too.


Banana and Oat Muffins

Makes 6

INGREDIENTS

3 cups rolled oats + 2 tbs extra for topping
1 ripe banana, mashed
2 eggs
1/4 - 1/3 cup honey
1 cup almond milk
2 tsp vanilla paste
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
2 tbs dark chocolate choc chips to sprinkle on the top

DIRECTIONS

Pre heat oven to 180C.

Add 3 cups of oats to a blender and blitz until fine. Add the eggs, honey, almond milk, vanilla, baking powder, salt and cinnamon and blitz again until combined.

Line a medium muffin tin with 6 liners and spoon the mixture into each. They won’t rise as much as regular muffins so feel free to heap the mixture in.

Sprinkle the tops with additional oats and some cheeky choc chips.

Bake for 20 - 30 mins until golden and cooked through.
