I’m totally embracing Spring, have you noticed how green all my posts have been?
This is great way to eat asparagus, we enjoyed ours with some freshly grilled salmon.
2 bunches fresh asparagus, trimmed and ends peeled
1.5 tbs white miso paste
2 tbs brown rice vinegar
1 tbs honey
1 tsp sesame oil
1 tsp toasted sesame seeds + extra to garnish
1/2 lime, squeezed
Trim asparagus and bring a large saucepan of salted water to the boil. Add the asparagus and cook 1- 2 minutes until cooked through but still very bright green. Drain the asparagus and run under cold water to stop the cooking process.
Whisk together the miso and vinegar until combined. Stir through the remaining ingredients.
Arrange the asparagus on a plate and pour over the dressing. Sprinkle with extra sesame seeds and serve.
