You'll Need

4 over ripe bananas

1/2 cup medjool dates (pitted)

1/4 cup melted butter/ or coconut oil

small pinch of sea salt

1 tsp vanilla extract

1 tsp cinnamon

1 + 1/2 cups wholemeal self raising flour

2 tbs shredded coconut

Method

Preheat oven to 170C

Grease a 6 hole muffin tin.

Blitz together the bananas and the dates in a food processor. Add the remaining ingredients except the coconut and process again until just combined.

Spoon the mixture out evenly into the muffin tin and sprinkle the tops with coconut and bake for 20 minutes or until a skewer comes out clean.
