I make up a batch of fresh pesto weekly to toss through pasta or a salad and even use it as a delicious sandwich spread for the kids lunches. Apart from being so versatile, it’s one of the easiest things to make on the planet.
1 head broccoli
50g grated parmigiano or pecorino
50g raw macadamias
1 garlic clove
1 red chilli
1/2 lemon, juice squeezed
salt and pepper to taste
2 tbs olive oil
Lightly steam the broccoli and set aside to cool.
Put all of the ingredients (except for the olive oil and salt & pepper) into a food processor and blitz to a coarse but blended consistency.
Season to taste and stir through as much olive oil as you need.
