The ultimate winter comforter. This is a meal in itself and a vegetarian dish your kids will not complain about.

You'll Need

50 gm butter, coarsely chopped
1/3 cup plain flour
2 cups warm milk
100 gm coarsely grated cheddar + extra
1 tbsp Dijon mustard
200 gm macaroni
1/3 caulifower, cut into florets
1/4 cup semolina
1 tbsp olive oil to drizzle

Method

Pre heat oven to 200C

Melt butter in a saucepan over medium heat, add flour and stir until golden (about 2 – 4 minutes). Gradually whisk in milk and stir until mixture is thick and comes to the boil. Stir in cheese, mustard and season to taste.

Meanwhile, cook macaroni according to packet instructions in a large saucepan of boiling salted water until al dente , adding cauliflower after 2 minutes. Drain and return cauliflower and macaroni to pan, stir in cheese sauce, season to taste, pour into a baking dish, scatter with extra cheese and semolina.

Bake in the oven for 20 minutes or until bubbling and golden.
