Grab some fish and make these for the kiddies they’ll love them ..
4 small flathead tails cut into chunks
1/2 cup rice flour
1 egg, whisked
1/4 cup panko breadcrumbs
1/2 cup finely shredded coconut
2 tbs rice bran oil to shallow fry
Set out 3 shallow bowls. One with rice flour, one with beaten egg and the other with the panko breadcrumbs mixed with coconut.
Roll the fish in the flour and shake of excess. Dunk in egg and coat well then press into the coconut mix.
Shallow fry on a medium heat until just cooked through and golden on both sides.
