Date & Almond Ball Recipe

These delightful gluten-free little bundles of goodness are sure to give your energy a lift, with absolutely no cooking required.

You'll Need
  • 300 gm pitted dates
  • 1- 2 tbs boiling water
  • 3/4 cup almond meal
  • 1 cup desiccated coconut
Method

In a food processor, blitz the dates and boiling water together starting with 1 tablespoon to begin with and add more if the mixture isn’t blending to a paste. If using fresh dates, you will most likely not need any water at all.
Add the almond meal and blend to a paste. Roll the  mixture into bite-size balls and roll in the coconut.
Store in the fridge.
