Date & Oat Biscuit Recipe

These biscuits are a great lunch box treat and perfect for kids that don’t like visible dried fruit. The date puree combined with a little maple syrup naturally sweeten these delicious biscuits so with no processed sugar added, they are healthy too.

 

You'll Need

1/2 cup pitted dates

1.75 cups spelt flour

100g oats (blitzed in the food processor)

1/2 cup desiccated coconut

1/4 tsp baking powder

125g butter, melted

1/3 cup pure maple syrup

1 tsp vanilla extract

Method

Soak the dates in a 1/3 cup of boiling water. Allow to soak for 10 minutes or so. Puree this mix with a hand blender until smooth.

Place the flour, oats, coconut and baking powder in a large bowl and mix.

In a separate bowl, combine the butter, maple syrup, vanilla extract and date puree together and gently mix into the dry ingredients until just combined.

Cover and refrigerate the mixture for at least 15 minutes.

Pre heat your oven to 180C

Roll small bowls of dough and place on a baking sheet, lightly flatten them as you go. Bake for 15 minutes or until golden.
