There used to be a place in my heart for sugary real deal chocolate brownies but I can honestly say that this high fibre, low sugar version featuring one of my favourite ingredients (sweet potato) is even better!

You'll Need

600g sweet potato, peeled and cut into chunks

10 soft medjool dates, pips removed

2 eggs

1/2 cup coconut oil

3 tbs almond meal or coconut flour

1 heaped teaspoon baking powder

1/2 cup raw cacao powder

3 tbs maple syrup

2 tsp vanilla extract

Method

Steam the sweet potato until soft and starting to fall apart (about 30 minutes).

Pre heat your oven to 180C.

Add the steamed sweet potato to a food processor with dates and whizz until smooth.

Add the rest of the ingredients and blend until combined.

Pour into a greased and lined square brownie tin (it helps to have the baking paper hanging over the sides to make it easy to remove from the tin).

Bake for 30 – 35 minutes or until a skewer comes out clean.

Allow to cool and cut into squares.
