In my food catering business, Mishka La Mushka, I catered private and corporate functions and events big and small, designed food in hat boxes for the Spring Racing Carnival and created too many themed kids birthday parties to mention. Healthy Granola Recipe
Yes, you read right. Some people must assume that granola is healthy because it’s made of oats, seeds, fruit and nuts. Well, most of the ingredients are good for you, but most people use oil or butter and copious amounts of honey or sugar to toast it. My version is better for the waist line, but still crunchy, sweet and yum.
You’ll need: 2 cups organic natural oats 1/2 cup sunflower kernels 2 tsp sesame seeds 1 small pinch of sea salt 2 tbs honey 1/3 cup shelled pistachios 1/3 cup shredded coconut 1/3 cup sultanas Preheat oven to 180C. Line a tray with baking paper, over lapping the edges. Mix together the oats, sunflower kernels, sesame seeds, sea salt and honey until mixed well. Bake in the oven for 10 minutes or until golden. Remove from the oven, and mix through through the pistachios and coconut and bake for another 5 minutes. Remove from the oven and toss through the sultanas and cool. Transfer to an airtight container.
