This is a great weeknight dinner for the kiddywinks. It’s quick and super easy and transports me right back to happy childhood Chinese restaurant memories.
You'll Need
- 2 tbs fresh ginger grated
- 3 garlic cloves, finely crushed
- 4 tbs runny honey
- 2 tbs soy sauce
- 2 tbs sesame seeds
- 3 tbs rice bran oil + 1 tbs extra for frying
- 4 chicken thighs, diced
- iceberg lettuce (to serve)
- crushed peanuts (to serve)
Method
Put the ginger, garlic, honey, soy and oil in a large zip lock bag. Add the chicken and mix it around to coat well in the marinade. Place in the fridge for at least an hour.
Heat the oil in a wok on a medium heat. Add the chicken and all the marinade, and sprinkle the sesame seeds over the chicken. Stir fry for 4-5 minutes or until cooked through. Arrange the lettuce and peanuts on a platter and serve with rice, if desired.
