These tasty little morsels are quick to whip up and cook on the bbq. I’ve served them as a yummy snack with drinks before but they would also make a delicious main meal. Throw some pita bread on the bbq for a few minutes after you’ve cooked the kofta and make a wrap with finely sliced red cabbage, tzatziki and the meat taken off the sticks.
- Heat the tbs of olive oil in a fry pan and gently saute the shallot and garlic for a few minutes until soft. Put aside to cool completely.
- Mix together the rest of the ingredients, adding the shallot and garlic and season well.
- Mould the mixture into small oval shapes around the skewer and refrigerate until ready to cook.
- Grill on the bbq until cooked through.
