These tasty little morsels are quick to whip up and cook on the bbq. I’ve served them as a yummy snack with drinks before but they would also make a delicious main meal. Throw some pita bread on the bbq for a few minutes after you’ve cooked the kofta and make a wrap with finely sliced red cabbage, tzatziki and the meat taken off the sticks.
Lamb kofta sticks
Serves 4 adults & 2 kids
500g lamb mince
4 shallots, chopped finely
2 garlic cloves, chopped finely
1 tbs olive oil
1 tsp ground cinnamon
1 tsp ground cumin
1/2 tsp sweet paprika
2 tbs grated lemon rind
1/4 cup olive oil + 1 tbs extra
Salt & pepper
Wooden skewers, soaked in cold water for 1 hour.
Heat the tbs of olive oil in a fry pan and gently saute the shallot and garlic for a few minutes until soft. Put aside to cool completely.
Mix together the rest of the ingredients, adding the shallot and garlic and season well.
Mould the mixture into small oval shapes around the skewer and refrigerate until ready to cook.
