Party ideas | Lemon Curd Tartlet Recipe

We had an afternoon tea party for my 2 year old on the weekend. Most of the food was standard party fare but I wanted to share two ideas that were really cute, super easy and loved by kids and adults alike.

Lemon curd tartlets
You’ll need:
2 packets pre-made short crust pastry casings (I know! but I could never get my own to look as perfect as this)
3 eggs
2 egg yolks
3/4 cup castor sugar
3 lemons juiced
Zest of 1 lemon
125g unsalted butter

In a small heavy based saucepan, whisk the eggs, egg yolk & sugar to dissolve.

Add the juice and lemon zest and butter and cook on a gentle heat, whisking from time to time until nice and thick. It should take around 10 minutes.

When the curd has cooled, pipe it into the ready made tartlets.

Easy peesy lemon squeezy.

Girly fruit skewers
I simply removed the tops off a punnet of strawberries & cut them in half. I also cubed some watermelon and threaded them on to sticks. They looked so pretty.
