This deliciously healthy pie is not for the faint hearted. It takes a dedicated cook to lovingly prepare each of the 6 layers, not including the pastry. It took up a good part of my Sunday yesterday but as the recipe states, it really is a pleasure to digest and is one of the tastiest vegetable pies I’ve ever eaten.
