Ricotta is a staple in our fridge. It’s so versatile and healthy & I cook with it quite a lot. These fritters take no time at all to whip up and again,  they are really yummy for kids and adults alike.

Zucchini Mint & Ricotta Fritters
Serves 2 adults and 2 kids
You’ll need:

2 medium sized zucchini’s grated
200gm fresh ricotta
1/2 cup plain flour
2 tbs chopped mint or basil
1 egg (lightly beaten)
Good pinch of salt & pepper
Olive oil

Mix all ingredients together in a bowl.

Drizzle olive oil in a non stick pan and heat to a medium heat.

Spoon a tablespoon of mixture and repeat (I usually do 4 at a time) and cook for 2-3 minutes on each side until cooked through. Drain on absorbent paper and serve with a yummy salad.

Handy Hint:

For a Caprese salad (tomato, basil and mozzarella) with a twist, I pile my beloved ricotta on the tomato and basil instead of mozzarella & drizzle the salad with a lemon infused olive oil. It is so mouth wateringly delicious.
