I make a batch of protein balls each week and I’m always varying my recipe. This version was too good not to share!

You'll Need

1 cup raw cashews

3/4 cup fresh pitted dates

1 tbs chia seeds

3 tbs natural crunchy peanut butter (I love the Mayvers brand)

1 tbs vanilla flavoured protein powder (I used Vital Pea Protein powder)

1/4 cup desiccated coconut + extra to roll

Method

Blend the cashews into crumbs using a food processor. Add the rest of the ingredients and process until the mixture forms a ball.

If the mixture is too dry add a little more peanut butter and blend again.

Roll the mixture into balls and roll in the extra coconut. Store in the fridge.
