Spelt Honey & Walnut Banana Bread Recipe
SERVES: 10 PREP: 5min COOK: 40minPRINT CONVERSIONS

This is a absolute lunchbox winner, keep it in the fridge and it will stay nice and moist. I’m looking forward to trying out lots of different combinations like rhubarb and almond, pineapple and coconut and apple and cinnamon.

You'll Need

2 cups white spelt flour

1 tsp baking powder

1 small pinch of salt

1 cup toasted walnuts chopped

2 ripe bananas, mashed

1/3 cup greek yoghurt

1/2 cup honey

2 large eggs, lightly beaten

1/4 cup grapeseed oil

1 tsp vanilla extract

Method

Pre heat the oven to 180C.

Grease and line a loaf tin with baking paper.

Place the flour, baking powder, salt and walnuts in a large mixing bowl.

Mix together the wet ingredients and add them to the dry mixture and mix until just combined, take care not to over mix.

Pour into the loaf tin and bake for 40 mins or until golden brown and cooked through.

    Hi Janet – Thanks for picking that up, I have amended the recipe. I was playing around with both amounts but I prefer it not too sweet.
