Combine the dry rub ingredients together and rub liberally over both sides of the ribs.
Pre heat oven to 150C
Place the ribs on a wire rack placed over a roasting tin filled with 200ml water. Cover the tin tightly with foil and bake in the oven for 3 hours. The ribs should be meltingly tender and falling off the bone.
Meanwhile make the sauce by blitzing the chipotle, water, bbq sauce, maple syrup, garlic, vinegar and salt together until smooth.
Smother the ribs in the bbq sauce and finish the ribs on a low heat on the bbq to caramelise, basting with the sauce as you go.
