Ever wanted a good authentic tasting recipe for chicken satay? Well this one is pretty tasty and makes a great summer dinner.
1 tbs soy sauce
1 garlic clove, crushed
2 tbs sweet chilli sauce
100ml coconut milk
1 stem lemongrass, finely chopped
225g crunchy peanut butter
1 tbs grated fresh ginger
1/2 tsp ground cumin
1/2 tsp ground coriander
400g chicken thighs, chopped into thin strips
12 wooden skewers
Place all the ingredients except the chicken into a food processor and add 3 tablespoons of hot water to soften the mixture. Process until smooth .
Reserve 1/2 cup of the marinade and pour the rest over the chicken and marinade for 1 hour or longer if you have time.
Meanwhile, soak the wooden skewers in cold water for 30 minutes (this helps to stop them from burning).
Thread the chicken onto the skewers. I sometimes grill the skewers under a hot grill, turning frequently until they turn a deep golden brown and are cooked through or they are also fantastic cooked on the bbq.
Serve them drizzled with the extra marinade that was set aside and a big summery salad and rice.
