Zucchini, Ricotta, Chive and Mint Fritter Recipe

On Tuesday 31 August, 7 September and 14 September at 11:00am, I will doing some ‘Spring inspired’ cooking demonstrations at the Prahran Market. All my recipes are tried and tested on fussy kids and should inspire you with some new dinner ideas to try out on your family and friends.

First up, I’ll be making these delicious Zucchini, Ricotta, Chive and Mint fritters. If you live locally, come and see me make this dish, and have a taste too.

You'll Need
  • 1 cup self raising flour
  • 2 eggs
  • 20g butter, melted
  • 1/3 cup milk
  • sea salt & cracked pepper
  • 2 small to medium zucchini, grated or julienned with a mandolin
  • 2 tbs ricotta, crumbled
  • 1 tbs chives, finely chopped
  • 1 tbs mint, finely chopped
  • olive oil
Method

Place the flour, eggs, butter, milk and salt & pepper to taste in a large bowl and whisk to combine.

Fold through the zucchini, ricotta and chives.

Heat 2 tbs of olive oil in a non stick fry pan and gently spoon in mixture. Gently flatten with the back of the spoon, so they cook evenly. Cook for 2 minutes on each side or until golden.

Keep them warm in a low oven.

    Talk about feed the whole family – even my 8 month old loved them!! he ate 4!!

    Hannah: Perhaps I could embark on a Australia wide tour! That would be fun. I'll be posting all the recipes I'm demonstrating over the next few weeks, so give them a try.

    Anonymous: Oh I love hearing that. My 11 mth loves them too and my non-green eating child can turn a blind eye when it comes to these little numbers.
