Sweet Potato, Coriander & Feta Roesti’s

When making sweet potato mash I often add coriander, the flavours work really well together. These roesti’s are brilliant on their own as a vege burger, or served as a side. Ours accompanied beautiful eye fillet steaks and green beans tossed with butter.

 

 













You'll Need
  • 1 large sweet potato, peeled and grated
  • 1 tbs butter
  • 1/2 bunch coriander, leaves picked and chopped roughly
  • 1/4 cup firm feta
  • 1/4 cup panko breadcrumbs + extra to coat
  • sea salt and freshly cracked pepper
  • grapeseed oil
Method

Put the grated sweet potato into a medium non-stick saucepan and add the butter, cook, stirring constantly until the sweet potato starts to break down and soften.
Take of the heat and allow to cool slightly. Mix through the coriander, feta and 1/4 cup of breadcrumbs. Season with sea salt and pepper.
Roll the mixture into even sized patties and gently fry on both sides until golden brown. They won’t need a lot of cooking.

    Yum! What a great idea for a side dish instead of just mashed sweet potato. I think I will have to make these next time I am cooking a steak.
