Oh so good, but oh so bad.
Old School Lemon Slice
2 x 200g packets of ready made shortbread
1 x 395 sweetened condensed milk
2 cup desiccated coconut
1 lemon, rind zested
125g butter melted
2 cups icing sugar
30g butter melted
3 tbs lemon juice
Butter and line a 20cm x 30cm slice tin and line with baking paper high enough to help you pull the slice out of the tin when set.
Blitz the shortbread in a food processor until you have fine crumbs.
Place the crushed biscuits, coconut, lemon rind and condensed milk into a large bowl and stir to combine. Add the melted butter and stir in.
Press the ingredients evenly into the prepared tray.
To make the icing, sift the sugar and stir through the melted butter. Add the lemon juice 1 tbs at a time until you have a smooth consistency. Spread over the slice and refrigerate until firm.
Cut in to even bars and serve.
