Silverbeet and Haloumi Fritters

These were a delicious result of some tired and droopy silverbeet and a flour shortage. These were made for the kids lunch but feel free to add chilli flakes to amp up the spice if desired, I definitely will next time.


Silverbeet and Haloumi Fritters

Serves 6

INGREDIENTS

1 small bunch silverbeet or swiss chard, roughly chopped
150g haloumi, roughly chopped
150g chickpea (besan) flour
1/2 tsp baking powder
1 egg
1 tbs olive oil
200ml cold water
1 garlic clove, minced
1/4 cup fresh mint, chopped
1/4 cup fresh dill, chopped
2 spring onions, finely chopped
1 pinch sea salt and cracked pepper


Blitz the silverbeet and haloumi in a food processor until finely chopped.

In a medium sized bowl whisk together the chickpea flour and baking powder. Add the egg, olive oil and water and whisk until you have a smooth paste. Add the garlic, herbs and spring onions and finely chopped silverbeet and haloumi. Stir to combine well.

Heat 1 tbs extra olive oil in a non-stick frypan and spoon in tablespoons of fritter mixture and fry on a medium heat for a few minutes each side.
