Crispy Chicken Burgers with Pickles and Ranch
These super tasty burgers stuffed with La Manna’s signature crispy chicken, oozing with a quick to prepare tangy ranch dressing and dill pickles, are the perfect easy lunch or dinner.
Crispy Chicken Burgers with Pickles and Ranch
Serves 4
INGREDIENTS
3/4 cup good quality mayonnaise (I use Best Foods)
1/2 cup crème fraîche
1/2 cup cultured buttermilk
1/2 bunch fresh chives, finely chopped
2 stems fresh dill, finely chopped
1/2 cup fresh flat-leaf parsley, finely chopped
1 tbs Dijon mustard
3 garlic cloves, finely minced
sea salt flakes and pepper to taste
4 soft burger rolls
8 pieces La Manna crispy chicken*
4 dill pickles, thinly sliced
butter lettuce leaves
Mix together all the ingredients for the ranch together, except the salt and pepper, in a medium bowl and stir well. Season to taste with salt and pepper. This makes about 1 ½ cups of ranch, which is more than you’ll need for this recipe. Store in a jar in the fridge for up to a week, it makes a great dipping sauce for chicken and crudités and can even be used for a salad dressing.
Preheat oven to 180C and place chicken on a lined baking tray and reheat for 12 mins, or until warmed through.
Cut buns in half and lightly grill cut side down in a non stick pan over a medium heat until golden, approximately 3 -4 minutes.
Slather a tablespoon of dressing on each bun and top with 2 slices of pickle, 2 pieces of crispy chicken, more ranch dressing if desired and a lettuce leaf.
Squish and serve.
