Green Goddess Chicken Salad

This has fast become my favourite salad. The ridiculously healthy dressing is so delicious, you’ll want to have it on almost everything!
Green Goddess Chicken Salad
Serves 4
INGREDIENTS
4 small sweet potatoes
2 large pre-cooked chicken breasts, diced ( I used leftover roast chicken for maximum flavour)
4 cups fresh rocket
Green Goddess Dressing
1 cup raw cashews
1 cup filtered water
1/2 cup fresh basil leaves
1/4 cup fresh chives, roughly chopped
1/2 cup fresh coriander leaves
Juice of 1 lemon
1 clove garlic, smashed
If you have a microwave, prick the sweet potatoes all over with a fork and microwave for 5 minutes or until tender. Alternatively, roast in an 180C oven for 30 minutes or until soft.
Add all the dressing ingredients to a blender and blitz until smooth. It will look gloriously green.
Combine the chicken, sweet potato and rocket in a bowl. Top with green goddess dressing, stir to combine and season to taste with sea salt and freshly cracked pepper.
