Crunchy Nut Granola

I’ve kept the sugars and fats low in this healthy take on toasted muesli and you certainly don’t miss it.

Crunchy Nut Granola


2 cups rolled oats
3 cups shredded coconut
1 cup mixed seeds (I used a combination of pumpkin seeds, pepitas, linseed and chia)
1/2 cup almonds
1/2 cup walnuts or pecans
1 cup chopped dates
2 tbs date syrup
5 tbs melted coconut oil or butter


Preheat your oven to 150C

Combine all the dry ingredients in a large mixing bowl and stir through the wet ingredients until well coated.

Spread the muesli over a large baking tray and bake for 20 mins or until golden. Give the ingredients a stir and cook for another 20 minutes or so until the granola is toasty and golden all over. Store in an airtight jar.

It’s delicious spooned over Greek yoghurt.
