Roast Duck Spring Rolls
These are mouthwateringly delicious. Grab a duck from your local Chinese restaurant and you are pretty much good to go.
Roast Duck Spring Rolls
Serves 6
INGREDIENTS
1/2 Chinese BBQ duck, bones removed
2 garlic cloves, minced
3 coriander roots. cleaned and chopped finely
3 spring onions, finely chopped
freshly cracked pepper
1 tbs hoisin sauce
1 packet spring roll wrappers (medium size)
peanut oil
Vietnamese mint
iceberg lettuce
DIRECTIONS
Chop the duck, including the skin as finely as you can and put it in a medium sized bowl. Add the garlic, coriander roots, spring onions and hoisin and season with pepper. Stir well to combine all the ingredients.
Place a heaped tablespoon of mixture on the end of one wrapper and roll up, firmly, tucking in the sides as you go. Seal the end with a little water.
Heat a wok with 1 inch of rice bran oil on a high heat. Add the spring rolls, a few at a time. Turn them at intervals to evenly colour the outside a golden brown. This will only take a few minutes. Once done, carefully remove them from the wok and drain them on paper towel.
Serve with iceberg lettuce and Vietnamese mint.
